Agritourism Deluxe: A Culinary Paradise in the Jura
Surrounded by 650 hectares of forest, a 15-minute drive from the small village of Vermes, with a view over the expanses of the Jura, lies the pretty private hideaway, which opens its doors on 1 June.
As an Agritourisme Deluxe, the château is adjacent to its own farm with
Simmental cows, sheep and goats. Sustainability is a top priority within the historic walls.
Numerous old materials were reused during the renovation. Roof tiles, for example, were used for three mayens, and the new barn was filled with shredded brickwork and floor slabs.
For the interior work, they used moon wood from their own forest and limestone from a nearby quarry in the Jura. A central, fully automated woodchip heating system with wood pellets from their own forest provides heat for the château, the associated farm and the hay drying facility, and water is drawn from their own spring. The property is connected to a private sewage treatment plant that treats wastewater using the SBR sequential biological purification system. And an 82 kWc solar power system generates 92,730 kWh of energy per year.
Regionality and seasonality also characterise the culinary offerings at the castle. Whenever possible, products such as vegetables, fruit, eggs, flour, bread and meat from our own production are served. Ingredients that cannot be produced in-house are collected from the countryside or ordered from small producers in the neighbourhood. When it comes to meat from their own farm, they deliberately avoid prime cuts and use second cuts.
The historic location at 1000 metres above sea level is the perfect retreat for nature lovers and those seeking peace and quiet with a penchant for culinary delights.
